Cheesy Zucchini & Tomato Casserole

Zucchini is the new pasta. Enjoy the same great taste of your favorite casserole, now with a whole lot fewer carbs, and a whole lot more protein. The perfect meal to whip up really quick at home, this deliciously creamy casserole is sure to fill you up without filling you out.


  • 1 packet Cheesy Mac Pasta Mix
  • 1 cup sliced, cooked zucchini
  • 1 thin sliced small tomato
  • 1/2 tsp parsley
  • Garlic powder to taste


  1. Arrange half the zucchini slices in the bottom of a microwave-safe casserole dish.
  2. Spoon half of the prepared pasta over the zucchini, followed by a layer of tomatoes.
  3. Repeat layers ending with tomatoes.
  4. Sprinkle parsley and garlic powder on the top.
  5. Microwave on HIGH (100%) 1-2 minutes or until the tomatoes are tender.
  6. Serve.
