Lemon Blueberry Pancakes

You'll never be able to go back to regular pancakes after trying this wonderful recipe infused with the tangy delight of lemons and the fresh wholesome goodness of blueberries, all brought together with spiced cinnamon. It's simple and brilliant - a truly delightful addition to any breakfast.

  • 1 packet BestMed Weight Loss Lemon Pudding
  • 1/3 cup All-purpose Flour
  • 1/8 tsp Cinnamon
  • 1/2 tsp Baking Powder
  • 1/4 cup Egg Beaters or Egg Whites
  • 1/3 cup Blueberries (fresh or frozen, thawed)
  • 1 cup Water


  1. Combine pudding, flour, cinnamon, and baking powder
  2. Add egg, blueberries & water to dry ingredients, stir until moist
  3. Coat a pan with cooking spray & turn stove to medium heat
  4. Spoons 1⁄4 batter at a time onto the heated pan, cook until slightly brown then flip to cook the other side
  5. For thinner pancakes, make the batter by adding more water, one tablespoon at a time
